The claim is real, and it is conditional. Here is exactly what it depends on.
Every can in this category carries the same claim: 25-year shelf life. Ours does too. So let us do something the industry mostly does not — explain what that number is measuring, and the conditions under which it stops being true.
Sealed, cool and dark is doing most of the work in that 25-year claim.
A 25-year rating is not a promise that the food is nutritionally and sensorially identical in 2051. It is a statement that, under specified storage conditions and packaging, the product remains safe and palatable across that window.
Three things have to hold: the can stays sealed, the moisture stays out, and the temperature stays reasonable. Break any one and the number changes dramatically. Most people who report disappointing results broke the third without realizing it.
Freeze-drying removes up to 98% of the water in food. That is the foundation the entire shelf life sits on. Microbial growth requires available water; at 2% residual moisture there is not enough for bacteria or mold to establish. Same principle that makes honey and salt-cured goods last — you are not killing organisms, you are removing what they need.
This is also the vulnerability. Freeze-dried food is hygroscopic — it actively pulls moisture out of the air. A compromised seal does not just let a little humidity in; the food draws it in. A dented seam or a rusted lid is a genuine problem, not a cosmetic one.
The oxygen absorber does real work. Even with the water gone, oxygen slowly oxidizes fats and degrades the product — it goes stale and eventually rancid rather than unsafe. Pulling residual oxygen to near-zero is what turns a few years into a few decades.
Shelf-life ratings assume storage in a cool, dry place with limited light exposure. The reactions that degrade stored food accelerate with temperature. A pantry at 60–70°F is a very different environment from an attic that swings to 110°F in August.
If a garage is your only option the food does not become dangerous — but plan on a shorter useful life and rotate accordingly.
Slowly: some vitamin content declines (particularly vitamin C and some B vitamins), fats slowly oxidize, flavor intensity softens. What generally does not change in a properly sealed can: protein, calories, minerals, and safety.
For a protein storage product that is a favorable trade. Protein and calories are what you are buying, and they are the most stable things in the can.
The most commonly misunderstood point. The 25-year figure applies to the sealed can. Break the seal and you are on a timeline of months, not decades.
This is a strong argument for buying a mix of sizes rather than all #10 cans.
Look for a swollen or bulging lid, rust at the seam, moisture inside, clumping of the contents, or an off smell on opening. Any of those and you discard it. A well-stored can looks and smells essentially the way it did going in.
Sealed can, oxygen absorber, cool and dry storage — hold those three and the number holds. Store it in a hot garage in a plastic tub and you are buying something closer to a five-year product at a 25-year price.
