Freeze-Dried vs. Canned vs. Dehydrated vs. MREs

Every seller claims decades. The published research says something more specific — and the gaps between methods are larger than the marketing suggests.

These four methods are not interchangeable. Their shelf lives differ by more than an order of magnitude, and the deciding variable in every case is temperature.

Note the MRE line. The US Army states it directly: “six months in 100 degrees Fahrenheit and three years at 80 degrees Fahrenheit.” Same product, wildly different life.

Temperature is the whole game

Utah State Extension gives the rule that governs every row above:

“For every 10.8 degrees in temperature rise, the shelf life of stored food is decreased by half.”

Optimal storage is a constant 40–60°F. This is why the same wheat lasts about 25 years in a basement and roughly 5 years in a garage.

How much water each method removes

Penn State puts freeze-drying at up to 98% water removal. The University of Minnesota is more conservative — up to 90% in sublimation plus another 1–2% in secondary drying. Either way, freeze-dried food ends up at a water activity of roughly 0.08 to 0.33, below what microbes need to grow.

Dehydration does not get that low, which is why its timelines are measured in months rather than decades.

Where each one wins

  • Freeze-dried — longest life, lightest weight, best texture on rehydration. The choice for deep storage and for carrying.
  • Canned — cheap, needs no water to prepare, edible straight from the tin. Heavy, and a 2–5 year rotation.
  • Dehydrated — cheapest to produce at home, fine for a season. Not a decade-scale option, especially for meat.
  • MREs — complete meals, no preparation, genuinely rugged. Short-lived in heat and expensive per calorie. A DoD ration provides about 1,285 calories and 40 g of protein.

Two claims you should not believe

You will see “freeze-drying retains 95–99% of nutrients” and “dehydrating loses 50% of nutrients” repeated across this industry. We could not find either figure in any extension service, government or peer-reviewed source. They appear only on vendor sites, uncited.

What the research does say is qualitative: freeze-drying “retains its taste, smell and nutritional profile” (Minnesota) and holds colour and shape better than dehydrating (Penn State). That is a real advantage. It is just not a number anyone has published.

And one that is true, but easy to misread

No preservation method here is a kill step. Utah State puts it starkly: “Freeze-drying does not kill bacteria and/or other microbes. It preserves them.” Raw meat must reach 160°F, poultry 165°F — before the process or after rehydration. This is why we only list fully-cooked product.
